Der interaktive Erlebnisweg spricht alle Sinne an und nimmt Sie mit auf eine spannende Entdeckungsreise über alle Grenzen hinweg.&lt;/p&gt;

&lt;p&gt;&lt;strong&gt;Fermentation live&lt;/strong&gt;&lt;/p&gt;

&lt;p&gt;Fort Kniepass ist ein Zentrum für Fermentation, entwickelt mit Ernährungswissenschaftlerin Karin Buchart. Workshops vermitteln Fermentationstechniken und fördern nachhaltige Ernährung. Die Slow-Food-Community „Fermentista im Alpenraum“ lädt alle ein, aktiv mitzuwirken und Lebensmittel kreativ zu beleben.&lt;/p&gt;

&lt;p&gt;&lt;strong&gt;Foodies &amp; Souvenir-Liebhaber: &lt;/strong&gt;Im Shop gibt es selbstgemachte Produkte, fermentierte Spezialitäten und regionale Mitbringsel – perfekt, um den Geschmack Salzburgs nach Hause zu holen oder zu verschenken.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;KULINARIK/Restaurant und Shop geöffnet: Mai, Juni, Juli, August, September, Oktober, 8. &lt;p&gt;Im Jahr 1979 wurde neben dem einstigen Nutzbetrieb von Dipl.-Ing. Friedlich Baron Mayr- Melnhof und seiner Gattin Maria Anna der uns heute bekannte Latschenwirt gebaut. Mit Gespür und Hochachtung vor alten Substanzen wurde für den damaligen Neubau altes Holz von abgetragenen Bauernhäusern verwendet. Der Latschenwirt ist in vielerlei Hinsicht ein besonderer Ort für Menschen mit Blick für das Besondere. Stets dem puren Lebensgenuss zwischen Wiese, Wald, Wild und Berg verpflichtet.&lt;/p&gt;

  &lt;p&gt;Eingebettet in die saftigen Hügel des Mattigtals in Seekirchen bei Salzburg leben wir in Harmonie mit unseren Kühen, die ihre Milch für unseren Bio-Käse geben. Um reine Bio-Qualität garantieren zu können, wird bei uns von der Milch bis zum Käse alles selbst gemacht – und das schmeckt man!&lt;/p&gt;

  &lt;p&gt;Inmitten der idyllischen Grünlandschaft des Mattigtals liegt der Krimpelstätterhof. Er wurde um 1600 erstmals urkundlich erwähnt und bis Mitte des vorigen Jahrhunderts von der Familie Krimpelstätter bewirtschaftet. Seit 1978 führt die Familie Mangelberger den Hof in alter Tradition zur Milchwirtschaft fort. Im Jahr 1994 wurde der Traum von der eigenen Hofkäserei realisiert. Josef Mangelberger sen. konnte hier seiner Leidenschaft freien Lauf lassen. Schon damals faszinierte ihn der kostbare Rohstoff Milch und was daraus gemacht werden kann. Seine Philosophie lautete von Beginn an: je hochwertiger die Milch, desto hochwertiger das Produkt. Mit diesem Leitsatz konnte er letztlich die ausgezeichnete Qualität der Erzeugnisse erzielen. Die Bio-Milchprodukte von Mattigtaler schmecken milder als herkömmliche, da die Milch gleich nach dem Melken verarbeitet und mit speziellen Bakterienkulturen angereichert wird. Die köstlichen Jogurts, die Frischmilch, der Sauerrahm und der Schlagobers sind angenehm cremig und verfügen über die perfekte Konsistenz auch für Desserts. Zusätzlich findet man auch Bio-Weichkäse und Bio-Frischkäse im Sortiment. Hier kann man in die vielfältigen Möglichkeiten des Mattigtaler Käses eintauchen und die verrücktesten Geschmackskombinationen kennen und lieben lernen.&lt;/p&gt;
